Hi friends! Happy Good Friday if you celebrate that. I hope you’ve had a great week! Mine has been pretty busy, which is just the way I like it.
Shall we get right into my Friday Five?
One: Amazon Pants
I have done it! I have found the perfect yoga pants…from Amazon. You read that right. Amazon!
I was influenced by @loverlygrey on IG for the leopard print blush colored yoga pants. Once they arrived & I wore them, I immediately ordered the burgundy leopard print. Early last week, I ordered the mauve colored pants. I loved the scalloped edge detail, which is also around the ankle. This brand, Core 10, is so good & they are size inclusive.
Not all yoga pants are created equal. These are great because they hold you in but allow you to move. They are so comfy, & also so cute!
Two: Tower Garden
I’ve always wanted a vegetable garden, but my yard is 90% shade. My backyard, specifically, is 100% shade. The front designated flowerbed is the only area that gets sun. So, I finally broke down & bought a tower garden from Juice Plus, which is also where I get my vitamins from.
Anyway, the tower arrived over the weekend & I put it together on Monday & started my seedlings. Two have already sprouted & they are so cute!
I love that the tower came with a step by step guide (with pictures) on how to start your seeds & transfer them to the tower. I’m going to cut those two sprouted ones & move them outside to keep growing.
Now JP+ sent me 5 different kinds of lettuce & basil. I have no need for that much lettuce, so I ordered some more seedlings, which should arrive today! I ordered some more herbs, yellow squash, cauliflower, bell peppers, tomatoes, strawberries, jalapeños, & celery. I’m so excited to attempt to flex my green thumb.
Three: Coconut Mojito
Y’all, it has taken me about 3 weeks to perfect my coconut mojito recipe, but I have finally done it! In Georgetown, TX there is a restaurant called Blue Corn Harvest – this is where my obsession with coconut mojitos was born.
Here is my recipe:
8 fresh mint leaves
1 tsp. of sugar
1 lime, juiced
1 oz. cream of coconut (not coconut milk)
3 oz. light rum
lime, mint, or coconut for garnish (optional)
I like make this in one of my stemless wineglasses – they are the perfect size. First, I muddle the mint leaves & sugar together with the back of a spoon. Then I add the lime juice & cream of coconut & mix all together. It will look thick. Add the rum & mix again. Add ice, & then add the sparkling water – I like Topo Chico for this drink. I originally kept trying it with coconut sparkling water, but it was too sweet. The drink will become very frothy & bright white. Enjoy!
Confession time – I have not been in a nail salon in 2+ years. Crazy, I know! I stopped going to the nail salon because I always left disappointed. They NEVER cut my nails short enough, I like them very, very short. I would get mad when my manicures only lasted a week or so. Just all the things bugged me. So, now I do my own nails & haven’t looked back.
Now is a great time to learn how to give yourself a manicure. Watch Katie’s video, as she has started an IG movement for at home manicures.

Five: Our Stop
I don’t know about you, but I have had such a hard time focusing on a book while in quarantine. I used to be a “2-3 books a week” person, now I’m a “1 book in two weeks” person.
This book reminded me so much of The Mindy Project and Bridget Jones’ Diary. It took awhile for me to get into Our Stop because for the first 20-ish pages there was no dialogue between any characters. But, once things started happening I really got into the book.
Daniel notices Nadia every morning on his train. Being shy, he decides to reach out to Nadia in the Missed Connections section of the newspaper. They go back & forth in the Missed Connections. Y’all this book is so cute, I feel like Taylor Swift would write a song about it.
Our Stop book makes me want to watch the “Missed Connections” episode of The Mindy Project so bad. I think I’ll do that this weekend. If you like British Chick Lit, you’ll like this book.
I hope you all have a happy Easter & celebrate with each other over Zoom. I personally will be going to brunch via FaceTime!
